French Onion Soup Recipe

A hearty soup to give you comfort on one of those days, this french onion soup is easy to make and satisfying. The onions slowly releases its juice while simmering and imparts a naturally sweetened base. Then we finished the soup by submerging pieces of baguettes and top it off with shredded mozzarella and Swiss cheese for a stringy and cheesy bite.  It is best enjoyed with a couple pieces of freshly toasted baguette to soak up more of the cheesy delicious goodness and a refreshing salad to contrast the rich flavors of the soup.

French Onion Soup Recipe

 Total Time : 45 Minutes
 Course: Soup
 Serving: 2

Ingredients

2 tbsp butter
1 onion, cut into chunky strips
4 cups of beef broth, you can substitute with beef bouillon cube or beef seasoning powder with the same amount of liquid
1 tsp thyme (dried or fresh)
1 tsp port wine
Salt and pepper to taste

1 tbsp shredded mozzarella
2 slices of Swiss cheese
2 pieces of sliced baguette
1 tbsp chopped parsley for garnish

How to make it?

1.  Melt the butter in medium heat pot.

2. Lightly stir-fry onions in medium heat until transparent.

​3. Add beef broth, thyme, port wine, salt, and pepper. Simmer for half an hour. The broth will eventually reduce down to almost half the volume.

4. Taste the soup and adjust seasoning before pouring the soup into an oven safe bowl.

6. Place a piece of baguette on top of the soup. Sprinkle the shredded mozzarella and cover the bowl with a slice of Swiss cheese. Broil until cheese are melted.

7. Serve hot with extra baguettes and a side salad.
