Homemade Ramen Noodles

While bread making has been all the rage this year, one staple food that has not received as much love is the fresh homemade noodle. That's right. The fan’s favorite that many just can’t seem to get enough whether it is the smooth and silken wheat noodle or the chewy ramen noodle.
​Noodle making might seem daunting, but it really isn’t. With the recipe I am about to show you, noodle making can become a simple process. With that said, this recipe is optimized for use with pasta maker. Having one will greatly help with the recipe.

Homemade Ramen Noodles

Prep Time: 30 mins
Serving Size: 2

Ingredients

1 cup of strong bread flour
1/2 cup of warm water
½1/2 teaspoon of fine salt.
1 teaspoon of baked soda (if making Chinese style noodle, omit this ingredient)*

* Baked soda is made by baking half a cup of baking soda at 380 F for 45 minutes. This is done to increase alkalinity in the soda that give the springiness to the ramen noodle.


How to make it?

1. In a small bowl, add warm water, salt, and baked soda (if making ramen noodle). 

2. Stir and make sure that salt and baked soda is dissolved. 
 
3. Add the mixture to the bowl with the flour then mix well. (Using chopstick to mix will prevent the dough from sticking to your hand.)
 
4. Knead the dough using your palm for 10 minutes (3 minutes on low speed setting if using a dough hook and a mixer) 

5. Place the dough on a well-floured surface. Sprinkle some flour on the dough, then roll out the dough roughly into rectangular shape about 1/4 inch (5mm) thick. 
 
6. Fold the dough length wise in three sections, then roll out into rectangular shape 1/4 inch thick. Repeat three time. (if you have a pasta maker, gradually roll the dough to number 6 setting) 

7. Roll the dough out to 1/8 inch (2.5mm) thickness then cut to the desirable width. On the pasta machine this is #4 for ramen noodle and #3 for plain Chinese style noodle on the flatness setting with smaller cutter.   

8. Sprinkle flour onto the noodle to prevent the noodle from sticking. Then store away until use. 
 
9. To cook the noodle, boil in water for 2-3 minutes.
