Thai Sweet Sticky Rice with Fresh Mango

Sticky rice and mango is arguably one of the most popular dessert in Thai cuisine. I mean what is not to like about the dish? It has richness, sweetness, and slight saltiness, all the things we looks for in a good dessert. This recipe will walk you through the basic of how to make the sweetened sticky rice that you can enjoy with a cold juicy mango in hot summer day (or whenever you feel like really).

​Ingredients

How to make it?

Total Time: 3 hrs 
Course: Dessert 
​Serving: 2
1 1/4 cups Thai sticky rice  
3/4 cups coconut milk
2/3 cups granulated Sugar  
1 tsp salt
1 ripe mango, peeled & cut into desirable pieces
​
For the sauce

1/2 cups coconut milk
1/4 tsp salt
​1/3 cups sugar
1/8 tsp jasmine extract
​
  1. First rinse the sticky rice in a bowl thoroughly. ( three rinses should do the trick)
  2. Soak the rice in a bowl of cold water for at least 3 hours.
  3. Meanwhile, pour the coconut milk in pot over low heat and add sugar and salt to the mixture.
  4. Combine coconut milk, salt, and sugar over low heat.
  5. Line the steamer basket with cheese cloth. Then boil enough water to steam for 20 minutes.
  6. Drained the sticky rice and steam for 15-20 minutes. The rice is ready when its soft yet still firm.
  7. In a large mixing bowl combine the steamed sticky rice with the coconut milk mixture and use wooden spoon to fold while still warm. leave for at least 1 hour before serving.
For the sauce
  1. In a small pot, heat the coconut milk over medium-low heat until reduce to half the original volume.
  2. Add sugar and salt to the coconut milk then stir until combined.
  3. Turn off the heat then add the jasmine extract and mix well.
